Ingredients

  • 4 - 4-6 oz salmon filets with skin on
  • 3/4 c. pure maple syrup
  • 1/4 c. low sodium soy sauce
  • non-stick cooking spray
  • Plenty of coursely ground black pepper

Method

  • Combine all ingredients except pepper in a zip-lock bag. Marinate a min. of 4 hours or up to 48 hours, turning occasionally.
  • Move oven rack to top position and preheat to 500F.
  • Cover a rimmed baking sheet with foil then spray with non-stick cooking spray.
  • Remove salmon from bag and discard the marinade. Arrange filets on cooking sheet then firmly press the black pepper into the top side of the salmon.
  • Cook 6 minutes for individual filets or 10 minutes for thick filets. (rule of thumb is 10 min. per inch of thickness.) The fish is done when it is pale pink but still moist.
