Ingredients

  • 1/2 c. butter or margarine
  • 1 c. light brown sugar
  • 3 large eggs
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/8 tsp. salt
  • 1 1/2 c. whole wheat flour
  • 1/4 tsp. vanilla
  • 1 c. orange juice
  • 1 can (11 oz.) mandarin orange segments, drained and cut in thirds
  • 1 can (4 oz.) chopped walnuts or pecans

Method

  • Heat oven to 350°.
  • Grease 18 regular muffin cups.
  • Beat butter and sugar until pale yellow and fluffy.
  • Beat in eggs.
  • Sift all-purpose flour with baking powder, baking soda and salt.
  • Stir in whole wheat flour.
  • Add vanilla to orange juice.
  • Fold flour mixture into butter mixture alternately with orange juice, ending with flour.
  • Fold in oranges, then nuts.
  • Spoon into muffin cups and bake until lightly brown, about 30 minutes.
