Ingredients

  • 14 cup peanut oil
  • 2 teaspoons fish sauce (or soy sauce)
  • 14 cup fresh lime juice
  • 2 tablespoons brown sugar
  • 3 small red chilies, deseeded and finely chopped
  • 800 g prawns, deveined and peeled leaving tails
  • 5 green onions, sliced
  • 400 g Broccolini, halved
  • steamed rice, to serve

Method

  • Combine oil, fish sauce, lime juice, brown sugar and chillis in medium jug.
  • Whisk well to combine.
  • Place prawns in bowl, pour over marinade.
  • Cover with plastic wrap and refrigerate 15 minutes.
  • Drain prawns reserving marinade.
  • Heat wok on high.
  • Add 1 tbs prawn marinade and heat until hot.
  • Add 1/2 the prawns and stir fry 1-2 minutes.
  • Remove to plate.
  • Repeat using another 1 tbs prawn marinade and remaining prawns.
  • Return all prawns to wok.
  • Add green onions, broccolini and prawn marinade.
  • Stir-fry 2-3 minutes.
  • Serve with rice.
