Ingredients

  • 10 lb. red tomatoes
  • 3 large onions
  • 2 red sweet peppers
  • 3 (2-inch) cinnamon sticks
  • 1 tsp. ground mustard
  • 1 tsp. allspice
  • 1 Tbsp. salt
  • 1 c. vinegar
  • 3/4 c. sugar
  • 2 tsp. paprika
  • 1 tsp. celery seed
  • 1 tsp. whole cloves

Method

  • Wash and slice all vegetables; combine tomatoes, onions and peppers.
  • Let stand about 30 minutes.
  • Add vinegar, sugar and spices, tied in a square of cloth.
  • Boil gently until thick, stirring often.
  • If you put vegetable slices through a coarse sieve before adding vinegar, catsup will be much smoother textured.
  • Pour into hot jars and seal.
  • Makes 4 pints.
