- 10 lb. red tomatoes
- 3 large onions
- 2 red sweet peppers
- 3 (2-inch) cinnamon sticks
- 1 tsp. ground mustard
- 1 tsp. allspice
- 1 Tbsp. salt
- 1 c. vinegar
- 3/4 c. sugar
- 2 tsp. paprika
- 1 tsp. celery seed
- 1 tsp. whole cloves
Method
- Wash and slice all vegetables; combine tomatoes, onions and peppers.
- Let stand about 30 minutes.
- Add vinegar, sugar and spices, tied in a square of cloth.
- Boil gently until thick, stirring often.
- If you put vegetable slices through a coarse sieve before adding vinegar, catsup will be much smoother textured.
- Pour into hot jars and seal.
- Makes 4 pints.
