Ingredients

  • 2 1/2 c. oat bran cereal
  • 2 tsp. brown sugar substitute
  • 1/2 tsp. salt
  • 4 oz. egg whites or egg substitute
  • 1 Tbsp. olive oil
  • 1/2 c. raisins
  • 1 Tbsp. baking powder
  • 1 c. skim milk

Method

  • Preheat oven to 425°.
  • Use nonstick spray only on bottom of 12 medium muffin pans or line with cups.
  • Combine dry ingredients. Add milk, eggs and oil.
  • Mix just until dry ingredients are moistened.
  • Fill muffin cups to 1/2 to 3/4 full.
  • Bake for 17 minutes or until golden brown.
  • Makes 12 muffins.
