Ingredients

  • 1/4 c. low-calorie margarine
  • 2 Tbsp. water
  • 2 c. (1/2-inch) white bread cubes
  • 2 c. blueberries
  • 4 tsp. lemon juice
  • 1/4 c. granulated fructose
  • 8 Tbsp. nondairy whipped topping

Method

  • Melt margarine, then mix in water and bread cubes.
  • Transfer 1/3 of mixture to the bottom of baking dish.
  • Top with 1 cup blueberries.
  • Sprinkle with half the lemon juice and fructose. Repeat the layers ending with the bread cubes.
  • Bake at 350° for 20 minutes.
  • Top with whipped topping.
