Ingredients

  • 2 (24 oz.) cans sweet potatoes, drained and mashed
  • 1/3 c. margarine or butter, softened
  • 1/4 c. orange juice
  • 1/2 tsp. salt
  • 2 c. miniature marshmallows
  • 1 c. Kellogg's Rice Krispies
  • 2 Tbsp. firmly packed brown sugar

Method

  • Combine sweet potatoes, margarine, orange juice and salt; beat until smooth.
  • Add 1 cup marshmallows.
  • Spread in 10 x 6 x 2-inch (1 1/2 quart) baking dish.
  • Top with remaining marshmallows.
  • Melt remaining margarine.
  • Combine with cereal and sugar.
  • Sprinkle with marshmallows.
  • Bake at 350° for 20 minutes or until thoroughly heated.
  • Yields 8 servings.
