Ingredients
- 2 (24 oz.) cans sweet potatoes, drained and mashed
- 1/3 c. margarine or butter, softened
- 1/4 c. orange juice
- 1/2 tsp. salt
- 2 c. miniature marshmallows
- 1 c. Kellogg's Rice Krispies
- 2 Tbsp. firmly packed brown sugar
Method
- Combine sweet potatoes, margarine, orange juice and salt; beat until smooth.
- Add 1 cup marshmallows.
- Spread in 10 x 6 x 2-inch (1 1/2 quart) baking dish.
- Top with remaining marshmallows.
- Melt remaining margarine.
- Combine with cereal and sugar.
- Sprinkle with marshmallows.
- Bake at 350° for 20 minutes or until thoroughly heated.
- Yields 8 servings.
