Ingredients

  • 1 3/4 lb. small zucchini, sliced thinly
  • 3 c. cooked rice
  • 4 c. cooked chicken or turkey, cubed
  • 1 (1 lb.) can tomatoes, chopped and drained
  • 2 1/2 c. grated Monterey Jack cheese
  • 2 Tbsp. chopped parsley
  • Sour Cream Sauce

Method

  • Cook zucchini in boiling water until tender-crisp (3 to 5 minutes).
  • Drain well.
  • In greased 3-quart casserole, layer rice, 1 cup Sour Cream Sauce, turkey or chicken, cheese, zucchini, tomatoes, rest of Sour Cream Sauce and parsley.
  • Bake 45 minutes at 350°.
  • Let stand a few minutes before serving.
