Ingredients
- 1 3/4 lb. small zucchini, sliced thinly
- 3 c. cooked rice
- 4 c. cooked chicken or turkey, cubed
- 1 (1 lb.) can tomatoes, chopped and drained
- 2 1/2 c. grated Monterey Jack cheese
- 2 Tbsp. chopped parsley
- Sour Cream Sauce
Method
- Cook zucchini in boiling water until tender-crisp (3 to 5 minutes).
- Drain well.
- In greased 3-quart casserole, layer rice, 1 cup Sour Cream Sauce, turkey or chicken, cheese, zucchini, tomatoes, rest of Sour Cream Sauce and parsley.
- Bake 45 minutes at 350°.
- Let stand a few minutes before serving.
