Ingredients
- 1 medium onion
- 2 medium green peppers
- 3 clove garlic
- 1 bunch fresh kale
- 15 oz diced tomatoes
- 2 tbsp italian seasoning
- 1 beef bullion cube
- 48 oz tomato juice
- 32 oz water
Method
- chop and sautee first 3 ingredients in soup pot
- add kale to wilt
- add diced tomatoes
- then add water and tomato juice
- once boiling add Italian seasoning and beef bullion
- let simmer for at least 2 hours on very low heat
