Ingredients

  • 1 pound of chicken strips
  • 2 cups of panko bread crumbs
  • 1 cup of bread crumbs
  • 1 cup of Macadamia nuts
  • 2 tablespoons of rosemary, thyme, chives, and basil
  • Dash of cayenne pepper
  • salt and pepper to taste
  • 2 beaten eggs

Method

  • Pre-heat oven to 350 degrees
  • Heat a little olive oil in a pan
  • Mix all of the ingredients, chop the herbs and nuts fine, except the eggs, and chicken.
  • Pat dry the chicken and dip into the beaten egg, then into the bread crumb mix. Shake off the excess then brown each side in the pan, put the strips on a cookie sheet. Bake in the oven until fully cooked, check with a thermometer.
