Ingredients

  • 2 c. chicken breasts, cooked and diced
  • 1 (10 3/4 oz.) can fat-free condensed cream of chicken soup
  • 1/3 to 1/2 c. fat-free skim milk
  • 1/2 c. onions, diced
  • 1/2 c. mushrooms, diced
  • salt and pepper to taste
  • 2 English muffins, halved

Method

  • Saut onions and mushrooms until tender. Add diced chicken. Mix soup and milk in a bowl. Add soup mixture to chicken and vegetables. Add salt and pepper to taste. Heat just to boiling. Toast muffin halves and top with chicken mixture. Makes 4 servings.
