- 1/2 stick margarine
- 3 chopped green onions
- 3 stalks chopped celery with some leaves
- 2 grated carrots
- 2 (10 3/4 oz.) cans chicken broth
- 2 (10 3/4 oz.) cans potato soup
- 8 oz. grated yellow cheese
- parsley flakes
- few drops Tabasco
- salt
- ground pepper
- 8 oz. sour cream
- 3 Tbsp. sherry
Method
- Melt margarine over low heat and saute onions, celery and carrots.
- Add chicken broth, cover and simmer 30 minutes.
- Add potato soup, cheese, parsley, Tabasco, salt and pepper.
- Stir in sour cream.
- Simmer 15 minutes.
- Add sherry, stir and serve!
