Ingredients

  • 1/2 stick margarine
  • 3 chopped green onions
  • 3 stalks chopped celery with some leaves
  • 2 grated carrots
  • 2 (10 3/4 oz.) cans chicken broth
  • 2 (10 3/4 oz.) cans potato soup
  • 8 oz. grated yellow cheese
  • parsley flakes
  • few drops Tabasco
  • salt
  • ground pepper
  • 8 oz. sour cream
  • 3 Tbsp. sherry

Method

  • Melt margarine over low heat and saute onions, celery and carrots.
  • Add chicken broth, cover and simmer 30 minutes.
  • Add potato soup, cheese, parsley, Tabasco, salt and pepper.
  • Stir in sour cream.
  • Simmer 15 minutes.
  • Add sherry, stir and serve!
