Ingredients

  • 3 to 5 lb. beef (inexpensive cut)
  • 2 c. water reserved from cooking beef
  • 1 tsp. chili powder
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 tsp. paprika
  • 2 1/2 c. catsup
  • 1/4 c. Worcestershire sauce
  • 2 tsp. Tabasco sauce
  • 1/2 c. brown sugar
  • 1 c. vinegar
  • 3 onions, chopped
  • 2 green peppers, diced
  • 2 potatoes, peeled and finely diced

Method

  • Cook beef covered with water until tender.
  • Save 2 cups of cooking liquid.
  • Let meat cool, then grind, shred or chop.
  • Place in Dutch oven or heavy pot.
  • Add all the other ingredients and cook over low heat until peppers and potatoes are tender, about 35 minutes.
  • Serve over rice.
  • Good for a crowd or two teenage boys.
