- 3 to 5 lb. beef (inexpensive cut)
- 2 c. water reserved from cooking beef
- 1 tsp. chili powder
- 2 tsp. salt
- 1 tsp. pepper
- 2 tsp. paprika
- 2 1/2 c. catsup
- 1/4 c. Worcestershire sauce
- 2 tsp. Tabasco sauce
- 1/2 c. brown sugar
- 1 c. vinegar
- 3 onions, chopped
- 2 green peppers, diced
- 2 potatoes, peeled and finely diced
Method
- Cook beef covered with water until tender.
- Save 2 cups of cooking liquid.
- Let meat cool, then grind, shred or chop.
- Place in Dutch oven or heavy pot.
- Add all the other ingredients and cook over low heat until peppers and potatoes are tender, about 35 minutes.
- Serve over rice.
- Good for a crowd or two teenage boys.
