Ingredients
- 3 c. cooked lobster
- 1 c. light cream
- 2 egg yolks, beaten
- Butter
- Salt and pepper to taste
- Brandy
Method
- Heat cream and egg yolks in a double boiler and cook till it thickens.
- Add in the lobster, finely cut, and cook for 10 min.
- Add in butter and season to taste.
- Add in a shot or possibly two of brandy; mix well and serve on toast points or possibly crisp crackers.
