Ingredients

  • 3 lbs. liver
  • 1 1/2 lbs. fat fresh pork
  • 2 tbsp. salt
  • 1 teaspoon pepper
  • 1/2 teaspoon cloves
  • 1 med. onion
  • 3 Large eggs, beaten
  • 6 tbsp. fine dry bread crumbs
  • 1/2 c. water

Method

  • Wash liver and remove veins and membranes.
  • Grind raw liver and pork twice through 1/8 holes.
  • Combine Large eggs, water, bread crumbs, onion, salt and spices, add in to liver.
  • Pack in pint or possibly 1/2 pint jars, leaving 1" headspace.
  • Seal.
  • Can in water bath for 40 to 50 min.
  • I have used bacon instead of pork.
