Ingredients
- 3 lbs. liver
- 1 1/2 lbs. fat fresh pork
- 2 tbsp. salt
- 1 teaspoon pepper
- 1/2 teaspoon cloves
- 1 med. onion
- 3 Large eggs, beaten
- 6 tbsp. fine dry bread crumbs
- 1/2 c. water
Method
- Wash liver and remove veins and membranes.
- Grind raw liver and pork twice through 1/8 holes.
- Combine Large eggs, water, bread crumbs, onion, salt and spices, add in to liver.
- Pack in pint or possibly 1/2 pint jars, leaving 1" headspace.
- Seal.
- Can in water bath for 40 to 50 min.
- I have used bacon instead of pork.
