- FRUITS:
- 2 peak-ripe mangoes, chopped into 1/2 inch pieces
- 3 c. coconut meat from a home-prepared coconut
- 1/2 cup stemmed maraschino cherries,pitless
- 1 cup chopped pineapple
- LIQUIDS:
- 1 cup fresh coconut water
- 1 8. oz can coconut cream
- OTHER:
- 1/3 cup dark rum
- 2 tablespoons Malibu coconut rum
- 2 tsp. vanilla extract
Method
- In blender, blend coconut meat, mango, cherries, and pineapple for 5 minutes on high.
- meanwhile in large ramekin.
- pour into mixture. blend on high for 30 seconds.
- chill in fridge for 2 hours 10 minutes.
- pour into 12 martini glasses.
