Ingredients

  • FRUITS:
  • 2 peak-ripe mangoes, chopped into 1/2 inch pieces
  • 3 c. coconut meat from a home-prepared coconut
  • 1/2 cup stemmed maraschino cherries,pitless
  • 1 cup chopped pineapple
  • LIQUIDS:
  • 1 cup fresh coconut water
  • 1 8. oz can coconut cream
  • OTHER:
  • 1/3 cup dark rum
  • 2 tablespoons Malibu coconut rum
  • 2 tsp. vanilla extract

Method

  • In blender, blend coconut meat, mango, cherries, and pineapple for 5 minutes on high.
  • meanwhile in large ramekin.
  • pour into mixture. blend on high for 30 seconds.
  • chill in fridge for 2 hours 10 minutes.
  • pour into 12 martini glasses.
