Ingredients

  • 8 ounces, weight Linguini
  • 1/2 Tablespoons Butter
  • 1/2 Tablespoons Olive Oil
  • 2 Small Zucchini, Sliced In Quarters
  • 1 Small Onion, Sliced In Quarter Rings
  • 2 cloves Garlic, Minced
  • 4 slices Bacon, Fried And Crumbled
  • 1/2 cups Shaved Parmesan
  • Salt And Pepper, to taste
  • Additional Shaved Parmesan, If Desired

Method

  • Cook the pasta according to the package directions, liberally salting the water.
  • While the pasta cooks, heat the butter and olive oil over medium heat.
  • Add squash, onion, and garlic and cook until onion is softened and squash has cooked to the tenderness you desire.
  • Drain pasta, reserving about 1/2 cup of the cooking water.
  • Add vegetables and bacon to the pasta and toss, adding cooking water to loosen the pasta if needed.
  • Add shaved Parmesan and toss lightly.
  • Add salt and pepper to taste.
  • Serve immediately with additional shaved Parmesan cheese, if desired.
