Ingredients

  • 8 ounces linguini cooked according to package instructions
  • 1 red pepper diced
  • 1/2 onion medium, chopped
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 1/2 cups vegetable broth
  • 15 ounces white beans drained and rinsed
  • 3 tablespoons chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • grated Parmesan

Method

  • In large skillet on medium heat, add oil, onions and pepper cook for 4 minutes
  • Add garlic and cook additional 1 minute
  • Add broth, beans and parsley and cook until heated through.
  • Crush about half of the beans with a potato masher or similar tool and stir to thicken broth.
  • Add cooked pasta and toss to combine.
  • Serve with grated cheese and parsley garnish.
