- 1/3 cup fresh lime juice
- 3 garlic cloves, minced
- 1/2 teaspoon ground ginger
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon salt, optional
- 1 pound boneless skinless chicken breast halves, cut into 1-inch strips
- 2 cups diced fresh plum tomatoes
- 1 cup diced green pepper
- 1/2 cup diced red onion
- 1 tablespoon minced fresh cilantro
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 2 garlic cloves, minced
- 1/4 teaspoon salt, optional
Method
- In a large resealable plastic bag, combine the lime juice, garlic, ginger, red pepper and salt if desired; add the chicken. Seal bag and turn to coat; refrigerate for 2-4 hours.
- Meanwhile, combine all salsa ingredients; cover and refrigerate until ready to serve.
