Ingredients

  • 1/3 cup fresh lime juice
  • 3 garlic cloves, minced
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt, optional
  • 1 pound boneless skinless chicken breast halves, cut into 1-inch strips
  • 2 cups diced fresh plum tomatoes
  • 1 cup diced green pepper
  • 1/2 cup diced red onion
  • 1 tablespoon minced fresh cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt, optional

Method

  • In a large resealable plastic bag, combine the lime juice, garlic, ginger, red pepper and salt if desired; add the chicken. Seal bag and turn to coat; refrigerate for 2-4 hours.
