Ingredients
- 2/3 cup sugar, divided
- 5 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 2 eggs,
- 1 cup milk
- 3 tablespoons lemon juice
- 2 tablespoons butter, melted
- 1-1/2 teaspoons grated lemon peel
- Confectioners' sugar, optional
Method
- In a large bowl, combine 1/3 cup sugar, flour, baking powder and salt. In another bowl, beat egg yolks; add milk, lemon juice, butter and lemon peel. Gradually add to the dry ingredients and mix well.
- Beat egg whites until soft peaks form; gradually add remaining sugar, beating until stiff peaks form. Fold into lemon mixture.
- Pour into a lightly greased 1-1/2-qt. baking dish. Place in a large baking pan. Add 1 in. of hot water to larger pan. Bake, uncovered, at 350° for 45-50 minutes or until lightly browned. Serve warm or chilled. Dust with confectioners' sugar if desired.
