Ingredients
- 1 c. butter, softened
- 1/2 c. sugar
- 1 c. all-purpose flour
- 1 1/2 c. rolled oats
- 1/2 Tbsp. lemon zest, grated
- 1/2 tsp. vanilla extract
- powdered sugar for dusting
Method
- Mix the sugar and butter until light and creamy. Add the remaining ingredients; mix well. Shape into 1-inch balls; place on lightly greased cookie sheet. Flatten with bottom of a glass dipped in powdered sugar. Bake at 350° for 12 to 15 minutes until edges are golden. Cool, then serve.
