Ingredients
- 1 lb. margarine
- 6 eggs
- 1 box brown sugar
- 4 c. plain flour
- 2 oz. lemon extract
- 1/2 lb. candied cherries
- 1/2 lb. candied pineapple
- 1 qt. pecans
Method
- Cream the margarine and sugar.
- Add egg yolks.
- Blend in 2 cups of flour.
- Coat fruit and nuts with remaining 2 cups of flour.
- Fold in fruit.
- Beat egg whites until stiff.
- Fold in all other ingredients.
- Let stand overnight in refrigerator.
- Bake in oven at 325° for 1 1/2 hours in loaf pan.
