Ingredients

  • 1 cup Butter, Softened
  • 1 cup Sugar
  • 3 whole Eggs
  • 2 whole Lemons, Zested
  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoons Salt
  • 1 teaspoon Ground Clove
  • 1 teaspoon Cinnamon

Method

  • Preheat oven to 350 degrees.
  • Beat butter for 2 minutes. Add sugar and beat till light and fluffy. Add eggs one at a time, scraping the bowl in between. Beat well. Add lemon zest.
  • Combine the flour, baking powder, salt, cinnamon and clove. Add to the creamed mixture.
  • Form into a 1 1/2-inch thick, 3-inch wide flattened log (you may need to do 2 logs depending on the size of your cookie sheet). Place on a greased cookie sheet. Bake for 35 minutes, or until set in the middle. Cool for 15 minutes. Cut on the bias 1-inch thick. Bake for another 15 minutes.
  • You may drizzle or dunk this in white chocolate and sprinkle with sugared lemon rind. You may also want to adjust the lemon and clove amounts depending on your palate.
