Ingredients

  • 3 lb. skinless chicken thighs
  • 1 1/2 c. lemon juice
  • 1/2 c. olive oil
  • 1 c. water
  • oregano
  • 1/2 stick butter or margarine
  • salt and pepper

Method

  • Wash chicken.
  • Mix lemon juice, olive oil and water.
  • Taste, if too lemony add more water.
  • Place thighs in 10 x 12-inch pan. Salt and pepper to taste.
  • Sprinkle oregano over thighs, turn and do other side.
  • Very carefully add lemon mixture to chicken having it about 1/2 inch over chicken; dot with butter.
  • Bake at 350° for 1 1/2 hours.
  • Makes 4 to 6 servings.
  • Make Lemon Potatoes for vegetable.
