Ingredients
- 3 lb. skinless chicken thighs
- 1 1/2 c. lemon juice
- 1/2 c. olive oil
- 1 c. water
- oregano
- 1/2 stick butter or margarine
- salt and pepper
Method
- Wash chicken.
- Mix lemon juice, olive oil and water.
- Taste, if too lemony add more water.
- Place thighs in 10 x 12-inch pan. Salt and pepper to taste.
- Sprinkle oregano over thighs, turn and do other side.
- Very carefully add lemon mixture to chicken having it about 1/2 inch over chicken; dot with butter.
- Bake at 350° for 1 1/2 hours.
- Makes 4 to 6 servings.
- Make Lemon Potatoes for vegetable.
