Ingredients

  • 8 3/4 ounces frozen spinach thawed, excess moisture squeezed out
  • 7 ounces ricotta cheese
  • 1 clove garlic minced
  • 4 corn tortillas
  • 7 ounces sliced ham
  • 10 cherry tomatoes halved
  • 1/3 cup mozzarella cheese grated
  • baby spinach to serve

Method

  • Preheat oven to 400°F. Line 2 baking trays with foil.
  • Combine spinach with 3.5 oz ricotta and garlic. Spread over tortillas then place on prepared trays. Arrange ham and tomatoes over top. Sprinkle with remaining ricotta and mozzarella. Bake for 10-12 mins, until cheese melts and base is crispy.
  • Serve topped with baby spinach. Season.
