Ingredients

  • 1 cup butter, softened
  • 2-1/2 qt. yellow cake mix
  • 3 qt. cold milk
  • 2/3 cup lemon juice
  • 1 pkg. JELL-O Brand Cheesecake Filling Mix
  • 1 tsp. grated lemon zest

Method

  • Place butter and cake mix in mixer bowl fitted with paddle attachment.
  • Beat with electric mixer on low speed 3 minutes.
  • Press evenly and firmly onto bottom of greased full size sheet pan (or half sheet pan for trial recipe).
  • Bake in 350F-standard oven for 10 to 15 minutes or until lightly browned.
  • Cool completely on wire rack.
  • Pour milk and lemon juice into large mixer bowl fitted with wire whip attachment.
  • Add cheesecake mix and lemon zest.
  • Beat on low speed 30 seconds; scrape bowl.
  • Beat on medium speed 2 minutes.
  • (Do not overbeat.)
  • Pour over crusts.
  • Refrigerate at least 1 hour.
  • Cut into 64 squares to serve (or 32 squares for trial recipe).
