Ingredients
- 1 c butter, softened
- 1/2c sugar
- 2 Tbsp grated lemon rind
- 2 c flour
Method
- Cream butter. Beat in sugar until light and fluffy. Stir in rind, then flour until blended.
- Shape dough into 2 equal discs. Wrap and refrigerate for 30 mins.
- Between waxed paper, rollout dough to 1/4" thick.
- Cut with cookie cutter
- Bake at 300 for 17-20 mins
