Ingredients

  • 1 lb. hot or medium seasoned Italian style sausage
  • 1 tsp. olive oil
  • 3 to 4 scallions, coarsely chopped (including some of the green part)
  • 1 stalk celery, coarsely chopped (leaves included)
  • 1 small onion, cut into thin rings
  • 1 small bell pepper, seeded, deribbed and cut into 1-inch cubes
  • 1/2 lb. small button mushrooms
  • 1/2 tsp. thyme
  • 1/8 tsp. each: dried basil and parsley
  • 1 c. dry white wine
  • fresh ground black pepper to taste
  • 2 Tbsp. fresh parsley, coarsely chopped

Method

  • Pierce sausage with a kitchen fork and place in a lightly oiled baking dish.
  • Bake in a 350° oven for 20 minutes.
  • Turn sausage and cook another 15 to 20 minutes until brown and remove off most of the fat contents.
  • Remove sausage and drain on paper towels.
  • Set aside.
