- 1 lb. hot or medium seasoned Italian style sausage
- 1 tsp. olive oil
- 3 to 4 scallions, coarsely chopped (including some of the green part)
- 1 stalk celery, coarsely chopped (leaves included)
- 1 small onion, cut into thin rings
- 1 small bell pepper, seeded, deribbed and cut into 1-inch cubes
- 1/2 lb. small button mushrooms
- 1/2 tsp. thyme
- 1/8 tsp. each: dried basil and parsley
- 1 c. dry white wine
- fresh ground black pepper to taste
- 2 Tbsp. fresh parsley, coarsely chopped
Method
- Pierce sausage with a kitchen fork and place in a lightly oiled baking dish.
- Bake in a 350° oven for 20 minutes.
- Turn sausage and cook another 15 to 20 minutes until brown and remove off most of the fat contents.
- Remove sausage and drain on paper towels.
- Set aside.
