Ingredients

  • 1 None cauliflower, broken into large florets
  • 4 slices bacon, chopped
  • 2 tbsp butter
  • 1 tsp oil
  • 1 None leek, trimmed and chopped
  • 2 tbsp flour
  • None None Pinch of freshly grated nutmeg
  • 1 1/4 cups milk
  • 1 tsp ground mustard
  • 2/3 cup grated Cheddar cheese
  • None None Warm crusty bread, to serve

Method

  • Preheat the oven to 375°F. Cook the cauliflower in lightly salted boiling water for 4-5 mins until just tender. Drain. Transfer to a shallow baking dish.
  • Cook the bacon in a medium saucepan until crisp. Sprinkle over the cauliflower.
  • Wipe saucepan clean. Heat the butter and oil in the pan on low heat. Stir in the leek. Cover and cook for 6-7 mins. Add the flour and nutmeg. Cook, stirring, for 1 min. Remove from the heat. Gradually stir in the milk. Return to the heat; stir until the sauce boils and thickens. Add the mustard and season. Spoon the sauce over the cauliflower. Sprinkle with grated cheese.
  • Bake for 20-25 mins until golden. Serve hot with warm crusty bread.
