Ingredients
- 1/2 c. Extra virgin olive oil
- 1/4 c. Tomato sauce
- 1 x Frying chicken cut up
- 1/8 tsp Saffron (powdered)
- 1 sm onion minced
- 2 1/2 c. Chicken broth
- 1 x Clove Garlic, Chopped
- 1 c. Uncooked rice Salt and pepper to taste
Method
- Heat oil, brown chicken on both sides.
- Add in onion and garlic, fry a few min, then add in tomato sauce, saffron dissolved in chicken broth, salt and pepper.
- Cover and cook for 20 min.
- Add in rice, stir well, cover again and simmer for 30 min longer, or possibly till all liquid has been absorbed and chicken is tender.
