Ingredients

  • 1 Can Coconut Milk
  • Juice from 2 Freshly Squeezed Limes
  • 1/2 Bunch Chopped Scallions
  • 1 Jalapeno Pepper, Seeded and Chopped
  • 1 Cup Chopped Fresh Cilantro Leaves
  • 1/2 Cup Olive Oil
  • Salt and Pepper to Taste
  • Wooden Skewers

Method

  • Pure all ingredients in blender.
  • Alternate shrimp and scallops on skewers and place in shallow pan.
  • Pour marinade over and refrigerate at least 1 hour.
  • Grill skewers on a barbecue, basting with remaining marinade.
  • Can be used to marinate other seafood or chicken.
