Ingredients
- 1 Can Coconut Milk
- Juice from 2 Freshly Squeezed Limes
- 1/2 Bunch Chopped Scallions
- 1 Jalapeno Pepper, Seeded and Chopped
- 1 Cup Chopped Fresh Cilantro Leaves
- 1/2 Cup Olive Oil
- Salt and Pepper to Taste
- Wooden Skewers
Method
- Pure all ingredients in blender.
- Alternate shrimp and scallops on skewers and place in shallow pan.
- Pour marinade over and refrigerate at least 1 hour.
- Grill skewers on a barbecue, basting with remaining marinade.
- Can be used to marinate other seafood or chicken.
