Ingredients

  • 3/4 cup chopped onion
  • 2 Tbsp olive oil
  • 16 oz. ricotta cheese
  • 1 lb. mozzarella cheese, shredded
  • 2 eggs
  • 2 cloves garlic, finely chopped
  • 2 (26 oz.) jars pasta sauce
  • 10 oz. package frozen chopped spinach (thawed and drained)
  • 1/2 cup grated parmesan cheese
  • 1 lb. package of lasagna, cooked and drained

Method

  • In large pan, cook onion and garlic in oil.
  • Add pasta sauce; simmer 15 minutes.
  • In bowl, mix ricotta, spinach, 1 cup mozzarella, parmesan and eggs.
  • In 15 by 9-inch baking dish, layer sauce, lasagna and cheeses accordingly.
  • Reserve half of mozzarella.
  • Cover and bake at 350 for 45 minutes.
  • Uncover and top with remaining mozzarella.
  • Bake 15 minutes or until cheese is melted.
