Ingredients

  • 1 lb. boneless lamb loin
  • 2 Tbsp. hoisin sauce
  • 2 Tbsp. soy sauce
  • 1 Tbsp. cornstarch
  • 1 1/2 Tbsp. dry sherry
  • 1 Tbsp. sugar
  • 4 Tbsp. cooking oil
  • 2 slices fresh, peeled ginger root
  • 1 clove garlic, minced
  • 4 Tbsp. water or chicken broth
  • 1 c. drained, sliced bamboo shoots
  • 6 scallions, cut into 2-inch sections
  • 1 tsp. dark sesame oil

Method

  • Cut meat against the grain into 2 inches long and 1/8-inch thick slices.
  • Combine hoisin sauce, soy sauce, cornstarch, sherry and sugar in a separate mixing bowl and set aside.
