Ingredients

  • 2 pounds diced lamb
  • 1 onion large, finely chopped
  • 2 cloves garlic minced
  • 4 tablespoons olive oil
  • 3 tablespoons honey
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 8 ounces tomatoes roughly chopped
  • 8 ounces prunes dried
  • 8 ounces dried apricots

Method

  • Combine diced lamb, onion, garlic, olive oil, honey and spices. Season. Cover and let marinate for at least 1 hour at room temperature, or overnight in the refrigerator.
  • Transfer lamb mixture to a large pan and add 3 cups water. Bring to a boil, cover and simmer very gently for 1 hour 30 mins, stirring occasionally. Add tomatoes, prunes and apricots. Cook, uncovered, for 15-20 mins, until thickened.
