Ingredients

  • 3 Tbsp. grease (bacon)
  • 1 1/2 c. rice (instant)
  • 1 c. finely diced onion
  • salt and pepper to taste
  • 1 small can tomato sauce or small chopped tomato
  • 1 tsp. cumin
  • 1/2 c. bell pepper, chopped
  • 1 Tbsp. Pace picante sauce
  • 2 c. water
  • 1 tsp. garlic powder

Method

  • Brown rice in grease.
  • Add onion, bell peppers, picante sauce and water.
  • Cover and simmer 10 minutes.
  • Uncover; add seasonings and tomato sauce.
  • Continue simmering until liquid is absorbed. "Ole."
