Ingredients

  • 1 large onion, chopped
  • 5 celery
  • 1 packages baby carrots
  • 1 packages frozen corn
  • 2 can diced tomatoes with Rosemary and oregano
  • 2 can diced tomatoes with spicy red peppers
  • 1 can green chilies
  • 2 can sliced olives
  • 4 large boneless skinless chicken breasts
  • 3 1/2 tbsp ground cumin
  • 2 1/2 tbsp chili powder
  • 4 tbsp taco seasoning
  • 1 salt and pepper to taste
  • 3 tbsp real butter
  • 3 quart chicken stock
  • 1 tbsp Italian seasoning
  • 3 tbsp minced garlic

Method

  • Sweat the onion and celery till onion is translucent.
  • Add carrots and continue cooking for 4-5minutes
  • Add chicken and remaining ingredients and bring to a simmer for 25-30 minutes
  • Serve over tortilla chips ,garnish with cheese,and sour cream
