Ingredients

  • 8 Green Onions
  • Habaneros 4-6 good 8-10 is ire mon.
  • 2T Peanut oil or your preference
  • 3 garlic cloves
  • 1C brown sugar (I usually use 1/2)
  • 2T Smoked Paprika
  • 2-3t Thyme - Fresh is best
  • 2t basil fresh
  • 2t ground ginger (if you use fresh grate finely about 1T)
  • 2t ground corriander
  • 1t chili powder - either generic or take your pick
  • 1/2 t each allspice, cinamon, ground cloves, ground cumin, ground nutmeg, black pepper
  • 1t salt
  • 1/2 t lime juice.

Method

  • Whirl in a blender or pound in a mortar until you have a thick paste.
  • Add tamarind to taste if you like some tang.
  • Marinate some meat for overnight then grill and drink some rum.
  • You can also char the green onions on a grill for a twist.
