Ingredients
- 7 c. flour
- 2 pkg. yeast
- 1/2 c. shortening
- 2 eggs
- 2 1/2 c. milk
- 1/2 c. sugar
- 2 tsp. salt
Method
- Combine 3 cups flour and yeast.
- Heat milk, sugar, shortening and salt until warm (115° to 120°).
- Stir constantly until shortening almost melts.
- Add this to dry mixture.
- Add eggs. Beat at low speed with electric mixer for 1/2 minute, scraping bowl.
- Beat 3 minutes at high speed.
- Stir in by hand the remaining flour to make soft dough.
- Shape into ball; place in lightly greased bowl.
- Turn once to grease surface.
- Cover; let rest in a warm place until it doubles (1 1/2 to 2 hours).
- Punch down; turn out on floured surface.
- Cover and let rest 10 minutes. Shape into desired rolls.
- Cover and let rise in warm place until doubled (30 to 45 minutes).
- Bake on greased muffin pans in a 400° oven for 10 to 12 minutes.
