Ingredients
- 2 c. self-rising cornbread
- 1 heaping Tbsp. flour
- 1 c. buttermilk
- 1/2 c. oil
- 1 small can corn (cream-style)
- 1 jalapeno pepper, chopped
- 1/2 green sweet pepper, chopped
- 1/2 c. grated Cheddar cheese
- 1 large onion, chopped fine
- 2 eggs
Method
- Mix meal and flour; add buttermilk, oil, eggs and corn.
- Mix well.
- Stir in pepper, onion and cheese.
- Grease an oblong baking pan.
- Bake at 375° for 35 minutes until done.
