Ingredients

  • Greens
  • Tomato
  • Cheese
  • Herbs
  • Eggs

Method

  • Take a muffin tin, spray with nonstick of your choice, throw in some nice light greens and a few bits of tomato, sprinkle a bit of cheese (I used a parm blend) then sprinkle some seasoning (I did sea salt, white pepper, parsley, basil, bit of crushed garlic, hint of rosemary, and a sprinkle of dried shallots), crack an egg over each of these, throw in the oven at 375 for 15-20 min.
