Ingredients

  • 3 lb. frying chicken
  • 1 Tbsp. oil
  • 1 medium onion, diced
  • 2 to 3 green onions, sliced
  • 1 large tomato, diced
  • 1 bay leaf
  • 1 Tbsp. tomato paste
  • 3 1/2 c. weak chicken broth
  • 1/2 c. peanut butter
  • 1 tsp. salt
  • 1 tsp. cayenne pepper

Method

  • Wipe chicken dry; brown in oil 5 to 10 minutes, turning 2 to 3 times.
  • Add both kinds of onions, tomatoes and tomato paste; cook 1 minute.
  • Stir in chicken broth and bring to a boil.
  • Cover and boil 8 minutes.
  • Turn heat to low.
  • Mix peanut butter with warm water to make a paste and add this to the chicken.
  • Add salt, cayenne pepper and bay leaf.
  • Simmer 30 minutes.
  • This is very spicy; adjust to taste.
  • Makes 4 to 6 servings.
