Ingredients
- 1 (46 oz.) can tomato juice (Campbell's or Heinz)
- 3/4 lb. bacon (3/4-inch slices)
- 2 medium onions, chopped
- 1 tsp. cayenne pepper
- 3 Tbsp. brown sugar
- 1 lb. okra (fresh or frozen, 1/2-inch slices)
Method
- Cook bacon in Dutch oven until about done.
- Add chopped onion. Cook until transparent.
- Add tomato juice.
- Cook to a slow boil. Add cayenne pepper and stir well.
- Add okra.
- Simmer 45 minutes, stirring occasionally from bottom.
- Add brown sugar and simmer 5 minutes.
- Skim off excess grease.
- Freezes well.
