- 3 c. raisins
- 1 c. brandy or grape juice
- 1 pt. strawberries (fresh or frozen)
- 2 c. blended plums
- 2 c. blended prunes
- 2 Tbsp. lemon juice
- 3 Tbsp. melted butter
- 2 Tbsp. vanilla
- 3 eggs, beaten
- 4 c. plain flour
- 2 1/2 c. sugar
- 1 Tbsp. salt, baking powder and cinnamon
- 1 tsp. ground cloves
- 1/2 c. chopped nuts
Method
- Combine raisins, brandy or grape juice and enough water to cover raisins in a saucepan.
- Bring back to a simmer, cool and drain.
- Grease and flour three 5 x 9-inch loaf pans or muffins. Mash or chop strawberries.
- Combine with remaining wet ingredients and stir.
- Combine with dry ingredients and mix well.
- Divide evenly among pans and bake for about 1 hour.
