Ingredients

  • 3 c. raisins
  • 1 c. brandy or grape juice
  • 1 pt. strawberries (fresh or frozen)
  • 2 c. blended plums
  • 2 c. blended prunes
  • 2 Tbsp. lemon juice
  • 3 Tbsp. melted butter
  • 2 Tbsp. vanilla
  • 3 eggs, beaten
  • 4 c. plain flour
  • 2 1/2 c. sugar
  • 1 Tbsp. salt, baking powder and cinnamon
  • 1 tsp. ground cloves
  • 1/2 c. chopped nuts

Method

  • Combine raisins, brandy or grape juice and enough water to cover raisins in a saucepan.
  • Bring back to a simmer, cool and drain.
  • Grease and flour three 5 x 9-inch loaf pans or muffins. Mash or chop strawberries.
  • Combine with remaining wet ingredients and stir.
  • Combine with dry ingredients and mix well.
  • Divide evenly among pans and bake for about 1 hour.
