Ingredients
- 2 lb. cut up cooked chicken
- 2 qt. chicken broth
- 1 pkg. frozen spinach
- 1 lb. small meat balls
- 2/3 c. Acini DePepe (pasta)
- 3 eggs
- 5 oz. Parmesan cheese
Method
- Heat chicken broth, cut up chicken, spinach and cooked meat balls.
- Cook until spinach is done.
- Add pasta and bring to boil. Boil 5 minutes.
- Turn off heat.
- Beat eggs and Parmesan cheese. Pour on top of soup.
- Cover with lid.
- Let sit for 10 minutes.
