Ingredients

  • 6 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 teaspoon kosher salt, plus 1 tsp
  • 14 teaspoon coarse ground black pepper
  • 2 (29 ounce) cansitalian pear tomatoes
  • 16 ounces penni pasta
  • 1 tablespoon fresh basil, chopped
  • fresh grated parmesean cheese

Method

  • Heat olive oil in a large pot.
  • Add chopped onion, 1 tsp salt & the pepper.
  • Saute' onion until soft.
  • Add tomatoes & 1 teaspoons salt.
  • Stir well.
  • Lower heat & simmer partially covered for 45 minutes.
  • Meanwhile, cook penni according to directions.
  • Drain well.
  • Rinse in HOT water.
  • Toss with fresh basil.
  • Add sauce & stir gently.
  • Top with fresh grated parmesean, if desired.
