Ingredients

  • 1 stick margarine
  • 1/2 c. vegetable shortening
  • 2 c. sugar
  • 5 egg yolks
  • 2 c. cake flour
  • 1 tsp. soda
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • 1 small can coconut
  • 1 c. chopped pecans
  • 5 egg whites, stiffly beaten

Method

  • Cream margarine and shortening.
  • Add sugar; beat until mixture is smooth.
  • Add egg yolks and beat well.
  • Combine flour and soda; add to mixture alternating with buttermilk.
  • Stir in vanilla. Add coconut and pecans.
  • Fold in egg whites.
  • Bake in greased and floured pans at 350° for 25 to 30 minutes. Do not overbake.
