Ingredients
- 3 c. sifted flour
- 2/3 c. sugar
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 c. seedless raisins
- 2 eggs, beaten
- 1 1/2 c. buttermilk or soured milk
- 2 Tbsp. oil
Method
- Have all ingredients at room temperature.
- Sift flour once. Measure.
- Add sugar, baking powder, baking soda and salt.
- Add. Sift again.
- Stir in raisins.
- Combine eggs, buttermilk and oil. Add liquid mixture to dry ingredients and mix until flour is moistened.
- Turn into greased 9 x 5-inch loaf pan and bake in a 350° oven about 50 minutes to 1 hour.
- Remove from pan immediately and allow to cool thoroughly.
