Ingredients

  • 2 one pound cans corned beef hash
  • 8 1/2 oz. can sliced pineapple, drained (save juice)
  • 1 banana, mashed
  • 1 Tbsp. sugar
  • 1/2 tsp. ginger
  • 2 bananas, split lengthwise

Method

  • Place hash in shallow baking dish.
  • Bake at 350 degrees for 30 minutes.
  • Combine pineapple juice with mashed banana, sugar and ginger in a saucepan and bring to a boil.
  • Arrange split bananas and pineapple slices on top of hash.
  • Baste fruit with ginger glaze and pour remainder over hash.
  • Place under broiler until bananas are golden brown.
