Ingredients

  • 5 12 cups all-purpose flour
  • 12 cup sugar
  • 12 ounce fast rising yeast (2 packages)
  • 34 teaspoon salt
  • 1 cup boiling water
  • 12 cup butter
  • 2 eggs, slightly beaten
  • 13 cup mashed potatoes
  • 1 cup chopped dates or 1 cup raisins

Method

  • In large bowl, mix together 2 cups of flour, sugar, yeast and salt.
  • Bring butter and water to nearly boiling.
  • Pour slowly over dry ingredients and mix into a dough.
  • Stir in eggs, mashed potatoes, and dried fruit.
  • Add flour to make a soft dough.
  • Knead on floured surface 1 minute.
  • Cover and let rest 10 minutes.
  • Cut ino 6 sections; shape into balls and place in 2 greased loaf pans (3 balls per pan); spray tops with butter or Pam; cover and let rise in a warm place for 60 minutes.
  • Bake at 350 degrees for 35 minutes.
