Ingredients
- 3 c. milk
- 1/3 c. cornmeal
- 1/4 c. sugar
- 1/4 c. molasses
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/8 tsp. baking soda
Method
- Heat oven to 275°.
- In a saucepan, heat milk over medium heat until bubbles appear around edges of pan.
- Stir cornmeal slowly into milk.
- Cook 10 minutes, or until thickened, stirring constantly.
- Remove from heat; add sugar, molasses, salt, cinnamon, ginger and baking soda; mix well.
- Pour into a greased 1-quart baking dish.
- Bake 2 hours or until knife inserted in center comes out clean.
- Serve warm with whipped cream or vanilla ice cream.
