Ingredients

  • 3 c. milk
  • 1/3 c. cornmeal
  • 1/4 c. sugar
  • 1/4 c. molasses
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/8 tsp. baking soda

Method

  • Heat oven to 275°.
  • In a saucepan, heat milk over medium heat until bubbles appear around edges of pan.
  • Stir cornmeal slowly into milk.
  • Cook 10 minutes, or until thickened, stirring constantly.
  • Remove from heat; add sugar, molasses, salt, cinnamon, ginger and baking soda; mix well.
  • Pour into a greased 1-quart baking dish.
  • Bake 2 hours or until knife inserted in center comes out clean.
  • Serve warm with whipped cream or vanilla ice cream.
